Reduced Glutathione is formed by the condensation of L-glutamyl, L-cysteine and glycine by peptide bond, and its chemical name is γ-L-glutamyl-L-cysteinyl-glycine, and its molecular formula is C10H17O6SN3. It is soluble in water, dilute alcohol, liquid ammonia and dimethylformamide, but insoluble in alcohol, ether and acetone; glutathione is stable in solid form, but oxidized easily in air in aqueous solution. The oxidative dehydrogenation of two molecules of active sulfhydryl groups of GSH is converted into one molecule of GSSG, but only GSH is physiologically active.
