Glutathione (GSH) is a tripeptide compound formed by the condensation of L-cysteine, l-glutamic acid and glycine, in which the α-amino Group of L-cysteine forms a special peptide bond with the γ-carboxyl group of glutamic acid, many of its biological functions are related to this peptide bond. In the signaling pathways of reactive oxygen species (Ros) and reactive nitrogen species (RNS) , the Glutathione acts as a central component to regulate metabolism through the change of redox status. The redox status of sulfhydryl groups in proteins determines their biological characteristics to a great extent, and involves protein structure, enzyme catalytic activity and redox signal transduction. Glutathione are more readily oxidized than other amino acids, and their products can also be reduced by intracellular reduction systems such as Glutaredoxin (Grx) , a member of the THIOL disulfide oxidoreductase family.
